Surprisingly fruity for a wine that is over 10 years old. Besides being unusual due to it’s age, this Cabernet is unusual in that it is slightly ‘Amarone’ style. This is a technique whereby the grapes are dried out slightly before fermentation, resulting in a multi-layered, concentrated treat. Figs, dates and a hint of leather represent the drying process to the nose, and smooth milk chocolate cherries and a hint of port fill your mouth with concentrated flavor. Smooth tannins indicate the age of this California Cabernet that is still maintaining good acid.
